potato chowder is comfort food for me — it reminds me of chilly winter nights when I was growing up, and my mom (a great cook from a long line of cooks, and Southern cooks at that) would fix potato chowder, this wonderfully filling, deliciously creamy, satisfyingly smooth and thick concoction chock full of fresh potatoes, corn, onions, and celery, with cornbread muffins on the side… I don’t have any cornmeal on hand (gotta make a note to fix that), but potato chowder is substantial and comforting enough to stand on its own (okay, not entirely on its own — I did fix a yummy broccoli salad to go w/it)…

it’s been snowing here most of the day today, and we’ve got about 3-6″ of new accumulation on the ground at our house (not that there was a whole lot of the previous snowfall left, except for the deepest drifts) — that’s a lotta snow for this girl from South Texas…! LOL yeah, today’s definitely a potato chowder day…
